  • half a stick of butter;

  • half a glass of sugar;

  • half a glass of candied fruits and seedless raisins.

Preparation:

  1. Beat the cottage cheese with a submersible blender, no matter how fatty and soft it may be initially.
  2. Connect prepared milk product with sour cream, softened butter and two types of sugar. Pour in the unbeaten egg whites last.
  3. Place the well-mixed ingredients in a saucepan on the stove and heat over low heat, stirring constantly.
  4. The mass will become liquid. When air bubbles come from the bottom, you can remove the pan from the stove and cool.
  5. Pour washed and dried candied fruits and raisins into the liquid base.
  6. Place clean gauze, folded in two layers, into a special form for Easter.
  7. Fill the container with the warm mixture, wrap the ends of the gauze and place a plate with any weight on top.
  8. Leave the “structure” in this form overnight in a cool place. There must be a container underneath the mold into which the whey will drain.

Turn the finished Easter over onto a plate and remove the gauze. Decorate the treat with confectionery sprinkles.

Light curd dessert according to the Dukan diet

Ingredients:

  • 1 tbsp. natural orange juice;
  • 1 tbsp. l. lemon zest;
  • 100 g low-fat cottage cheese;
  • 2 egg whites;
  • ½ g stevia;
  • ½ tsp. fine salt.

Preparation:

  1. Grate the lemon zest very finely.
  2. Soak the gelatin for 6 - 7 minutes in slightly warmed water. Then drain the liquid from it.

  4. Salt the whites, beat them into a thick foam and mix them into the curd mass.

  • 200 – 250 g low-fat cottage cheese;
  • 100 – 150 g of fresh pineapple pulp (can be replaced with canned fruit);

  • 8 – 9 fresh strawberries;

Preparation:

  3. In a separate bowl, beat the remaining ingredients (except cookies) until smooth.
  4. Pour gelatin into the lush mass and mix everything well.
  5. Place cookies in the mold. Fill each layer with the cream from the previous step.

Ingredients:

  • ½ tbsp. fat milk;
  • 15 g quality gelatin;

  • 2 pineapple rings (canned).

Preparation:

  1. Combine gelatin with chilled milk and leave for 20 - 25 minutes.
  2. Grind the cottage cheese with two types of sugar and stir in sour cream into this mixture. Beat the ingredients with a mixer.
  3. Heat the milk together with the gelling component swollen in it, but do not let it boil.
  4. Carefully pour the resulting mixture into the whipped cottage cheese, add miniature pieces of pineapple and mix everything.
  5. Place the mixture in a silicone mold and refrigerate for 5 – 6 hours.

Decorate the finished delicacy with patterns of jam or preserves.

Quick donuts with sugar

Ingredients:

  • 1.5 tbsp. sifted flour;
  • 1 egg;
  • 7 dessert spoons of granulated sugar;
  • 200 – 250 g homemade cottage cheese;
  • 0.5 teaspoons of quicklime soda;
  • 1.5 tbsp. refined oil;
  • powdered sugar without additives.

Preparation:

  1. Grind the cottage cheese with a fork, beat the contents into it raw egg and all the sand.
  2. Add the remaining bulk ingredients, except powder. Knead into a thick dough. It shouldn't be too sticky. Leave the mixture to sit for 20 minutes.
  3. Divide the dough into 2 parts and roll each into a “sausage”. Cut them and roll the resulting pieces into neat small balls.
  4. Heat the refined oil in a saucepan and add the curd balls into it in small portions. Cook them until golden brown on each side.

Place the finished donuts on paper towels, and then pour them into a deep, beautiful bowl and sprinkle big amount powdered sugar.

“Old Riga” – a classic recipe

Ingredients:

  • 1.5 tbsp. pineapple juice;
  • 400 – 450 g cottage cheese;
  • 1 can of pineapple (canned);
  • 1 full cup very heavy cream;
  • ½ cup condensed milk;
  • 25 g of quality gelatin.

Preparation:

  1. Pour gelatin into a saucepan. Pour fruit juice into it in a thin stream, stirring constantly.
  2. When the gelatin swells, place the container with it on low heat. Wait until the dry grains are completely dissolved. Do not bring the mixture to a boil. Cool.
  3. Pass the cottage cheese through a sieve with the smallest holes. Combine it with cream and beat until smooth.
  4. Add condensed milk and vanillin to the cottage cheese. Continue beating for a couple more minutes.
  5. Pour small pieces of fruit into the curd mass, add juice and gelatin to them. Mix everything well with a wide spoon.
  6. Pour the mixture into small silicone molds.

After 6 - 7 hours in the coolness, you can turn the dessert onto plates and serve to guests. It should be decorated with condensed milk, chocolate or just freshly ground cinnamon.

Ingredients:

  • 200 – 250 g of fat cottage cheese;
  • 5 dessert spoons of sour cream (at least 20%);
  • 4 things. baked milk cookies;
  • 30 ml of freshly brewed espresso (coffee);
  • half a glass of white sugar.

Preparation:

  1. Place all the fatty cottage cheese into a large bowl. If it has grains, then you should first rub it through a fine sieve. For the same purpose, you can use an immersion blender operating at low speed.
  2. Add all the sugar to the cottage cheese at once and mix the ingredients with a spoon. Add sour cream and repeat beating.
  3. You need to work with a mixer/blender until all the sweet grains in the mass are completely dissolved. The consistency of the mass should be medium - neither too liquid nor too thick.. Set aside the whipped mixture for a while.
  4. Break the cookies into large pieces, place half of them in two wide glasses and pour a small amount of coffee on top.
  5. Next, put half of the curd mass, dividing it into two glasses, cover everything with the remaining cookies and add coffee again.
  6. Lastly, distribute the rest of the curd mass.

    1. Place the oatmeal in a coffee grinder and process it until it becomes flour.
    2. Add coarsely chopped nuts, 40 g of honey, butter and plain flour.
    3. Mix the dough with your hands, form into a ball and leave it for a quarter of an hour.
    4. After this time, distribute the mixture in an even layer over the mold and knead well.
    5. Peel the apples from all excess, cut into small pieces and place in a frying pan. Pour the remaining honey over them and simmer under the lid until soft.
    6. Beat the remaining ingredients together: cottage cheese in the form of a paste, vanilla and eggs.

    Peel the bananas and cut into 2 parts. If you suddenly can’t find larger bananas, then take small ones and use them whole.     We take long skewers for kebabs and cut them into two parts with scissors. Place the sliced ​​bananas on skewers. By the way, if you have the opportunity to buy special wooden popsicle sticks, then be sure to buy them, since bananas sit much more comfortably on such wide sticks, but in the absence of them, ordinary wooden skewers will do.

    Place the resulting banana “popsicles” on a freezing tray and place them in the freezer for about 5 minutes. We need them to cool slightly on top. There is no need to completely freeze them at this stage.

    While the bananas are cooling, prepare the glaze. Break chocolate (I used 56% black, but you can use a mixture of dark and milk or just milk, depending on the sweetness of bananas and your taste) into small pieces and combine with butter.

    Melt the chocolate in a steam bath or in the microwave until it becomes smooth. Whatever method you choose (bathhouse or microwave), the main thing is to never overheat the chocolate, otherwise it will curdle and turn into a lumpy mass. Therefore, stir the chocolate as often as possible and check its consistency.

    Pour the resulting glaze into a tall narrow glass (for me it’s a glass for making yogurt). If there is no suitable container, then we simply skip this step.

    Now we take out the cooled bananas and quickly dip them into the glaze one by one (do not keep the bananas in the glaze for a long time, since then the layer of chocolate will be very thick).

    If you haven’t found a suitable glass for the glaze, then simply apply the chocolate with a spoon or brush, or completely roll the bananas in melted chocolate.

    Next, take the bananas out of the glaze and quickly (on cold bananas the chocolate sets quickly) sprinkle them with all kinds of sprinkles, or you can just roll them in them. In general, here you can safely use your imagination and decorate bananas the way you want.

    Mochi is made by hand. The process is quite complicated, but if you use special rice flour, everything will become much easier, and mochi can be prepared without the help of others. For mochi, they use a lot of fillings - sweet pastes made from red beans, peanuts, sesame, chestnut. The Japanese, along with the classic ones, offer fillings with the most common flavors - cherry, peach, strawberry. The finished dish is frozen and thawed before eating and served cool. Yield: 10-12 pieces.

    • Rice flour - 50 g
    • water - 150 mg
    • sugar - 100 gr
    • cream 35% – 75 mg
    • dark chocolate – 100 gr
    • corn starch - 100 g

    I start cooking with the filling: Pour the cream into a bowl and put it on the fire. When the cream starts to boil, add pieces of chocolate to it. Stir until smooth. I set it aside until the chocolate has cooled, then put it in the freezer (the mass must keep its shape).

    Next: pour water, sugar and rice flour into a saucepan, stir and put on fire. The mass will soon begin to harden, I lift the pan over the flame and stir vigorously, and as a result a snow-white, compacted mass will come out.

    Now I pour starch on the table and pour the mass onto it. I let it cool and before sculpting I sprinkle starch on top (it is allowed to sprinkle excess starch, all excess can be easily shaken off).

    Then I work with my hands, cut a piece from the mass with a knife and use my fingertips to form circles approximately 3 mm wide. I take the filling and put it in the middle.
